Playing Downtown
Monday was Tommy's last day here so we went downtown to the Museum of Natural Sciences (or something like that - yes, family, I did go to a museum...and I didn't hate it). They had an animal show where you could pet the animals which Brook thought was pretty cool. After that, we walked down Fayetteville Street and had lunch at Chick-fil-A. (Tommy requested having that before he left since we don't have it in Minnesota). Then we swung by the new Krispy Kreme in the plaza so I could try their cappuccino (very good!) and then stopped at one of our favorite local coffee shops, Crema, for Tommy & Mark to get coffee. It was a fun way to end our time with Tommy. Thanks for coming to visit, Uncle Tommy! Brook keeps asking, "Go go, Tommy?" and we have to tell her you went back to Minnesota. :)
Fall Family Fun Fest
On Halloween we went to the Fall Family Fun Fest at our church. We brought along a couple of bumblebees. Mark and I said to eachother several times how we thought we had the cutest bumblebees there. :) Tommy was our faithful photographer. Thanks Tommy! It was fun watching Brook really enjoy the games and candy this year. It's hard to believe that when we took her last year she wasn't even walking yet!
Green Acres Farm
Another fun thing we did with Uncle Tommy was visit Green Acres Farm in Cary. It was such a fun family outing! They had a hay ride, a corn maze, some bounce houses, a bunch of trucks and tractors to play with and some mini corn mazes for the little ones. Oh yeah, and a pumpkin patch too. We had a great time!
"Healthy" "Ice Cream" Sandwiches
There are lots of quotations in this title because it really should say "healthiER (I mean, these aren't like eating carrots) alternative to ice cream (it's cool whip, not ice cream) sandwiches." That being said, I ran across this recipe I had in college but never made. It's easy, truly healthier than regular ice cream sandwiches, and a GREAT treat for kids! (And Mark and I certainly don't mind them either). :)
Ingredients:
1 box Betty Crocker chocolate fudge cake mix
2 eggs
1/2 cup unsweetened applesauce
1 tub of Fat Free Cool Whip (thawed)
Preheat oven to 350. Spray cookie sheets with Pam. Mix first three ingredients. Drop by tablespoon full onto cookie sheet and bake for 12 minutes. Cool completely. Batter should make about 36 cookies (made closer to 30 for me). Put 2 tablespoons Cool Whip on 1 cookie and cover with another cookie. Wrap each sandwich in plastic wrap and freeze.
Enjoy!

Playing at the park
Yesterday morning Mark had to go into work for a few hours so Tommy and I took the girls to the park by our house. We had a lot of fun! Brook loves having her Uncle Tommy here. :)

A Thought for You...
I was challenged and encouraged reading this this morning. I hope it serves you in that way too.
